Salt baked fish. There’s nothing better than a recipe that is as easy as it is delicious. I made this for dinner one night with my younger son. He had been wanting a whole fish and getting him engaged in the cooking process is always easier when there’s a “ta dah!” element to it.
Try this super easy recipe, I promise you won’t be disappointed.
For this recipe I used a Striped Bass. You could use Branzino or Snapper, whatever is fresh, is the best!
Simply clean the fish cavity out and stuff with your favorite herbs and seasonings. Create a loose slurry with Kosher Salt and egg whites (for mine I just picked up a small pint of egg whites at Trader Joe’s)
Line your sheet pan with parchment paper and lay a layer of the Salt and Egg white slurry on the bottom of the pan, then place fish on top, and cover with the remaining slurry.
Pop it in a 400 degree preheated oven. When edges and top are browned the fish is cooked, this takes approximately 30-40min depending on size of fish. Serve with lemon wedges and enjoy, YUM!
Salt Baked Fish
Serves 2-3
Ingredients
1-2 Whole Fish (Branzino, Sea Bass, or Snapper)
1 lemon sliced
1 lemon quartered for serving
Chopped herbs, any combo, approximately 1tbs per fish cavity:
Parsley
Thyme
Basil
Lovage
For the salt crust
1 box Kosher Salt (2lb)
1 pint egg whites (I used maybe half)
Olive Oil & Pepper (I didn’t use additional salt as slurry contributes some saltiness)
Instructions
Preheat oven to 400degrees. Rinse fish cavity out and season with pepper and stuff with lemon slices and herbs. Set aside on a plate while you prepare salt crust.
Empty container of salt in a large bowl and add enough egg whites, when mixed, that the salt holds together.
Line sheet pan with parchment paper and use about a cup of salt crust and lay your fish on top. Use the rest of the mixture to cover the fish and put in the preheated oven for approximately 30-40min.
Fish is done when the edges are browned.
Remove top crust and serve!
Notes
Make sure not to add too much egg whites, otherwise the crust will run off the fish.
Serve with simple steamed potatoes and let the fish be the superstar!!
