We are dedicating this post to Prince on the eve of his birthday, June 7th. Between the two of us we have seen Prince in Los Angeles, New York, London, Paris. A visit to Paisley Park in Chanhassen, Minnesota is high on our list of places to visit. Prince’s favorite foods were apparently spaghetti paired with orange juice, Cinnamon Graham Dunkeroos, and yak’s milk. Since he was allegedly a vegetarian, we were inspired to create a treat for his birthday, Prince’s Purple Popsicles!
Prince’s Purple Popsicles
makes 6-10 popsicles
Ingredients
1 cup of frozen blackberries
2 cups frozen blueberries
1 can organic coconut milk
1 tablespoon agave
1/8 cup sugar
pinch of salt
Special equipment
Blender
Sieve
Popsicle molds with sticks
Instructions
Put all the ingredients together in a blender. Blend for one or two minutes. Place a sieve over a spouted Pyrex or bowl. Pour half of the blender contents into the sieve. Use a spoon to push the mixture through the sieve. Discard the seeds and repeat the process. Pour the strained liquid into molds. Freeze and serve!
Notes
If you can’t find sticks to the your existing molds, you can buy wooden ones and use aluminum foil to hold them in place.
Here’s a little fact – The shade of purple on the background of our blog is Pantone color “Love Symbol #2. The Pantone Color Institute announced its 2018 color of the year: purple. The shade, “Ultra Violet,” was inspired in part by Prince. Last August, Pantone and the Prince estate joined forces and announced the creation of the standardized custom color.
Beyond his musical genius here are a few ways Prince made an impact in the lives of others.
- He helped create #YesWeCode, an organization which gives underprivileged kids an entrance into the tech industry.
- He was behind “Green For All,” an advocacy group for green energy and social justice
- He donated Uptown Dance Academy when he found out they were going to lose their space back in 2014 and the studios were able to remain open.
