
Nothing could be easier to make than some Pickled Shrimp. Like most recipes – tweak this one to your taste. Pickled shrimp are great on a cracker with a splash of your favorite hot sauce or add some to a salad. If you see some beautiful plump shrimp at the market – grab some!

Pickled Shrimp
Serves 4

Ingredients
1 sweet/red onion, thinly sliced
1 small lemon, thinly sliced
3/4 cup vinegar – cider or rice
1/2 cup neutral oil
1/4 cup fennel fronds
1/2 teaspoon celery seeds
1/2 teaspoon sugar
1 teaspoon salt
1 teaspoon black peppercorns
1 1/2 pounds Shrimp
optional jalapeno slices
Instructions
Peel and clean the shrimp – I like to keep the tail on. Blanch the shrimp in boiling water for 3 minutes. Drain thoroughly.
Place all other ingredients in mason jar. Add shrimp. Shake to cover shrimp in marinade. Place in fridge and marinate overnight. Enjoy!
