My daughter is graduating from high school this year. Graduation is in fact tomorrow! At Oakwood in the last month of school they must complete a senior project of their own creation. It is very freeform. Mazie was going to paint or do a LA travel project with some friends but ultimately she opted for “Cooking with Karis.” She decided she wanted to learn some of our favorite family recipes before she finished her senior year. I was honored and delighted as we embarked on a two week cooking project. We made Pasta with Fresh Pesto and Shrimp, Caesar Salad with Homemade Garlic Croutons, Roast Chicken, Roast Potatoes and Gravy, Spaghetti Bolognese, Potato Leek soup, Fried Pickles, Salmon and Rice with Cumber Salad and Old Bay Spicy Marinated Chicken Kebabs with Risotto. I have always loved cooking with my kids but this was truly special, a time I will always cherish before she heads off to college.
I love cooking for friends and family and I wanted to share with Mazie recipes that are streamlined and easy. I think every home cook should have at least five recipes they can make in their sleep, so if you suddenly have four or six extra people for dinner you cook make something nice without missing a beat.
A good quick easy marinade is a great thing to learn. It’s especially good when you can find it on the back of the Old Bay tin. I am a total sucker for recipes on the back of things and the Old Bay Spicy Marinated Chicken Recipe is one of my favorites.
Kebabs sometimes seem a bit time consuming to make for a crowd but not if you get some help in the kitchen. Thank you Oscar! The kids prefer onion as the only addition to the kebab although sometimes I throw a bit of zucchini on mine. Obviously you can add all sorts of veg to the marinade and pop on your sticks. Make sure you soak the sticks for at least half an hour before you put them on the grill.
These are great on an indoor or outdoor grill. Enjoy!
Old Bay Spicy Marinated Chicken Kebab
serves 2
Ingredients
1/4 cup oil
2 tbsp cider vinegar
2 tsp Old Bay seasoning
1 tsp dried parsley
1/4 tsp ground black pepper
1 lb boneless chicken
1 onion quartered
6 wooden kebab sticks soaked in water for 1/2 hour
Instructions
Cut up chicken into chunks. Mix marinade ingredients. Add chicken and let sit 1/2 hour. Remove chicken and thread onto sticks alternating with onion.
Notes
Multiply the recipe as needed. I like to triple the marinade and cut up 1 lb white meat and 2 lb thigh which leaves a nice amount of leftovers
