We’ve all been inside longer than we would anticipated. Planning a vacation impossible, but not doing anything seemed tragic, so we did what we had done for years when the kids were little and packed up the car and went camping. Every step of the way in this pandemic, our kids are looking at how we cope, we are their roadmap of dealing with the big unknown. Originally we had planned a trip to camp in Lake Tahoe area. A nice seven hour car ride, I hoped would allow us that unfettered time to chat, but less than 10 hours before we were set to depart, we got an alert that the air around the area was practically unbreathable and we had to do a quick pivot and find a new campground.
Every single place I looked for was completely booked up, but were undeterred. I called a friend and she mentioned about seven miles from Mono Hot Springs there was a campground that took no reservations. Eek! Not within my comfort zone to head out without knowing where we were going to sleep. We drove over six hours. It rained while we were searching for this mysterious campground that wasn’t listed in any books and then we found it. It was magical and my lad fished his heart out. Trout for days!! A happy reprieve from uncertainty and a hidden campground we can claim as our own.
Was the experience seamless…well nothing ever is. Would I do it again…absolutely!

Fried Trout with Lemon Garlic Butter Sauce
Serves 2
Cast Iron Pan
Ingredients
2 Fresh Trout – Gutted and Cleaned
2 Tbs Butter
2 Cloves Garlic
1 Lemon Juiced
Salt & Pepper
Fish Seasoning (I used Paul Prudhommes)
Instructions
Season the the inner cavity of the fish and the outside with salt, pepper, and seafood seasoning. Heat pan to medium high and cook fish approximately 3-4 minutes per side. Remove from pan. Lower flame and add butter, then garlic stir to soften, don’t let it brown or it may become bitter. Add lemon juice. Taste. Adjust seasoning as needed and pour over the fish.
*Check your seafood seasoning for added salt, you don’t want to over salt!
