Nothing says comfort food more than a Chicken Donburi bowl, some sautéed Gai Lin, a soy egg, served over rice. Easy to make and even better to eat. Delicious self care, it’s what’s on the menu tonight! We got this…one meal, one day at a time.
Chicken Soboro Donburi Bowl
serves 2
Ingredients
1 tbs vegetable oil
½ lb ground chicken
1 tbs minced onion or shallot
1 tsp ginger
2 tbs sake
2 tsp sugar
1 tbs mirin
1.5 tbs soy sauce
*optional pickled ginger for serving
Instructions
Heat oil on medium high and add minced onion or shallot, when it becomes almost translucent, add chicken and stir for a couple of minutes then add garlic and seasonings of ginger, sake, sugar, mirin, and soy sauce. Meat should be cooked through.
Serve in bowl over rice. Add your greens and soy egg. *see recipe below for Soy Egg
Notes
Sautéed Greens:
1 tbs of vegetable oil
1 bunch of greens of your choice, I used Gai Lin (Chinese broccoli) but you could use spinach, Swiss chard, or any of your faves
Heat pan with oil, saute greens until done. If you’re using low moisture greens, add a bit of water to pan to keep them moist.
Soy Sauce Egg
12 eggs
Ingredients
- 12 eggs
- 3/4 cup soy sauce
- 2 tablespoons brown sugar (or white sugar)
- 1 tablespoon rice vinegar
- 4 dried chilis (or 2 jalapeno peppers)
- 2 star anise pods
- 3 to 4 cups water
Instructions
Combine the marinade ingredients in a small pot. Bring it to a boil, then simmer for 5 minutes. Remove the pot from the stove and let it cool.
Boil water and put eggs in for 6min 25 secs (my sweet spot) to 7 mins. This is a taste preference so you need to play around with time and size of eggs. While the eggs are boiling, prepare an ice bath
When the eggs are done cooking, run cold water over them for 30 seconds. Add the eggs to the ice bath and let them cool completely, about 10 minutes. Peel and place in jar with marinade (they stop bobbing on top after a bit so not to worry they will fully marinate) Marinate the eggs in the fridge for a minimum of 6 hours before serving. If you want to serve the eggs sooner drizzle some extra marinade onto the cut eggs.
